2 lbs (900g) beef chuck, cut into 1-inch cubes
2 tablespoons vegetable oil
1 large onion, diced
3 cloves garlic, minced
3 medium carrots, peeled and cut into chunks

1 cup red wine (optional)
2 tablespoons tomato paste
2 bay leaves
1 teaspoon dried thyme
1 teaspoon paprika

Instructions:

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Season the beef cubes with salt and pepper, then sear them in batches until browned on all sides. Remove the beef and set it aside.
